Santiago Naula, originally from Quito, Ecuador, started in the world of hospitality at the age of 21 when he was studying computer systems engineering.

His first contact with bars was in the luxurious -now defunct- restaurant SAN TELMO in the city of Quito. It was love at first sight, that passion led him to leave his engineering career and specialize in Bar and Restaurant Management.

The owners of SAN TELMO – Avero Family – decided to open CHOSEN BAR, the 1st Fine Cocktail Bar in Ecuador, together with Nicolas Castro, here they awakened creativity and hunger for knowledge for their profession, surrounding themselves and learning from great professionals in the world of cooking. wine, coffee, fermentations and hospitality.

The same curiosity took him to Europe to specialize at the Basque Culinary Center, he was part of the team of the renowned Bartender Patxi Troitiño with whom they inaugurated the cocktail terraces of Pedro Subijana’s Akelarre Restaurant (3* Michelin).

During his time in competitions he has demonstrated talent and creativity.

Best signature cocktail Schweppes Hibiscus 2017, Top 20 World Class Competition Spain 2018, Winner of the WC Cocktail Festival Spain 2019, the latter led him to attend the World Class Competition 2019, the most important cocktail competition in the world in Scotland, nominated for Best Mixologist by DIARIO VASCO 2021 and 2023

Santiago has given Master Classes and cocktail training to professionals in various cities in Spain, Gastronomy Centers and Universities in Ecuador and Monaco.

Thanks to its concepts GASTRONOMIC CRITERIA AND FLAVOR ARCHITECTURE Santiago has created the Canelazo cocktail – a cocktail version of the traditional Ecuadorian hot drink Canelazo – which is being replicated in several cities in Ecuador and Europe.

In April 2023, together with Espy Carrión, he materialized a dream that he had had in his head for several years, SYBARIS CREATIVE COCKTAILS was born.
