We like our clients to feel involved in what we prepare at our bar, for us each cocktail is a challenge because we seek to "make tailor-made suits" for us each client is special, we seek to identify their tastes and when they try the cocktail they give us a gift a smile. On the other hand, we never stop learning, every month we change products, techniques, etc. We are constantly testing and looking for ways to express the flavor of the product to the maximum, whether with macerations, fermentations, vacuum impregnations, CO2, working with food enzymes, etc. It is true that there is a lot of work that is not seen, but it is undoubtedly worth it.

We love to travel the world, we like markets, markets tell us a lot about a place, its products, its culture, its flavors.
Our cocktails express flavors of the land that welcomed us 5 years ago, Euskadi. We make by-products with local products and flavors, for example the Cordial de Txakoli has been very well received, I designed it for the most important cocktail competition in the world and it is here to stay, some colleagues have asked us for the recipe and it is already being replicated and we loves! With cider we make airs, with latxa sheep's milk we have made Sidra Colada, a clarification of a "Piña Colada" with cider.
Likewise, we do not forget where we come from, we are from Ecuador and our culture and our flavors are also present in our cocktails. We are the promoters of CANELAZO as an international cocktail from Ecuador, a traditional drink that is originally hot, we have taken it to the world of cold cocktail so that it can be replicated all over the world, this cocktail to our client, wherever they come from Europe, America, Asia, etc. He likes it a lot. We also work on cocktails with MISKE distilled from Andean agave with DO Ecuador.
